SO2 is the chemical formula for sulfur dioxide, a colorless gas with a characteristic sharp odor that is used in the food industry as a preservative and antioxidant. Under the designation E220, it helps protect food against the growth of bacteria, molds and yeasts while also limiting unwanted browning and oxidation.
Sulfur dioxide slows down the growth of microorganisms and extends the shelf life of food.
It protects food from fat oxidation and discoloration, which is especially important for vegetables, potatoes or fruit.
It helps maintain the natural appearance and taste of ingredients during storage.
In ready-made sterilized meals such as MRE (Meal Ready to Eat), SO2 may appear not as an added chemical but as a natural or secondary component of the raw ingredients used.
Sulfites are commonly found in certain raw materials such as dried fruit, potato products, spices or wine. The manufacturer does not intentionally add them to the recipe; they are already present in the supplied ingredients.
Sulfur dioxide and sulfites are classified as legally regulated allergens. If their concentration in the final product exceeds 10 mg/kg, they must be declared in the ingredients list – even if they were not added directly by the manufacturer.
Residual sulfites in raw materials help prevent vegetables from turning gray or potatoes from darkening during drying and storage.

For the majority of the population, sulfur dioxide in food is safe within permitted limits. Only individuals with severe allergies or asthma may be more sensitive, which is why SO2 must be declared on the label. In MRE and sterilized meals, it is present only in very low trace amounts that do not pose a health risk.
SO2 (sulfur dioxide) is a commonly used antioxidant and preservative. In high-quality MRE meals such as those from Adventure Menu, it appears only indirectly from raw ingredients and is not added as artificial chemicals. Thanks to modern processing technologies, these meals remain safe, long-lasting and fully suitable for consumption.
